Green tomatoes are firm and acidic. They make a great base for relish, salsa or chutney. Green tomato pickles are an unusual and delicious addition to an appetizer or crudités tray for the holidays. Green tomato gratin will cause fights over second servings. And of course, if you've never tried fried green tomatoes you are really missing out on something wonderful. Fried green tomatoes are awesome as a side or snack but they're elevated to the sublime when added to BLTs, hamburgers or served for breakfast with over-easy eggs.
